We ferment whole berries in stainless steel to capture Shiraz’s vibrant fruit character, using gentle pump-overs for balanced extraction. Adding dried stems during fermentation boosts aromatic lift and complexity. After pressing, the wine matures for 12 months in oak—20% new—bringing layered structure, refined tannins, and just the right touch of spice and toast.
