Grapes were handpicked early in the morning at Cavalli, in three separate pickings. Grapes were crushed, pressed and settled overnight to achieve good clarity of juice.
The juice was inoculated with two different yeasts: one aimed at achieving a fuller mouthfeel and an expressive fruit profile. The wines were fermented in stainless steel tanks, with occasional stirring of the lees post-ferment. The wine was blended just 2 months on its lees and prepared for bottling.

The farm uses 100% Vititech mother block plant material, resulting in virus-free vineyards and optimal growth that produces outstanding wines. Extreme attention to detail, from soil preparation to bottling, combined with a hands-on approach, ensures grapes of the highest quality.
