Crafted from two distinct Polkadraai Hills vineyards, this Stellenbosch Merlot combines elevation and soil diversity for layered complexity. Grapes were hand-harvested at peak ripeness, then berry-sorted and fermented in stainless steel at 27°C with gentle pump-overs to extract soft tannins and rich color. Aged for 12 months in 300L French oak (20% new), the result is a balanced, fruit-driven wine with fine tannin structure and excellent aging potential.
