Description

The Saronsberg Desert Lily Pinot Noir 2025 is a rare and unexpected expression of Pinot Noir from the rugged slopes of Tulbagh. Produced from two tiny vineyard blocks planted at the highest point of the estate and surrounded by indigenous fynbos, this limited-release wine showcases a fresher, more lifted side of the region.

The nose is delicate yet expressive, revealing aromas of wild strawberry, red cherry, floral notes, and subtle spice. On the palate, the wine is soft, smooth, and vibrant, with fresh acidity carrying bright red fruit through to a finely textured finish. There’s an effortless drinkability here, balanced by enough structure and nuance to keep the wine intriguing from first sip to last.

Lightly chilled, this Pinot Noir pairs beautifully with duck, charcuterie, grilled salmon, mushroom dishes, or simply enjoyed on its own.
The grapes were hand-harvested at 4am to preserve freshness and aromatics before being cooled to 4°C in a cold room. After destemming and hand sorting, the grapes were transferred via gravity to open-top stainless steel fermenters for a 3-day cold soak under CO₂.

Fermentation took place at 24°C, with gentle pump-overs performed three times daily. Following fermentation, the free-run wine was transferred to older 300L French oak barrels for malolactic fermentation and 9 months of maturation, allowing texture and integration without overpowering the fruit.

The wine was lightly filtered before bottling, preserving purity and elegance.
