Description

The Tokara Telos Cabernet Sauvignon 2019 stands as the pinnacle of the estate’s Cabernet Sauvignon portfolio — a wine crafted only in exceptional vintages from the finest parcels on the slopes of the Simonsberg Mountain. “Telos,” meaning ultimate purpose or highest expression, reflects Tokara’s pursuit of precision, purity, and site-driven excellence.

Deep and intensely colored, the wine opens with layered aromas of blackcurrant, cassis, and dark cherry, intertwined with notes of graphite, cedar, and fine spice. Subtle hints of fynbos and crushed herbs add a distinctly Stellenbosch character. On the palate, the wine is powerful yet impeccably balanced, with concentrated dark fruit framed by fine-grained tannins and beautifully integrated oak. The structure is firm but polished, leading to a long, complex finish that evolves gracefully in the glass.

This is a world-class Cabernet Sauvignon with both immediate presence and exceptional aging potential, pairing seamlessly with prime cuts of beef, lamb, venison, and richly prepared dishes.
Fermentation occurs in two bespoke small raw concrete tanks. Pre- and post-fermentation maceration ensures gentle but complete extraction from the skins and allows for softer handling of the cap during the peak of ferment.

Only the free run component is taken to a selection of French oak barriques, the cooperage selection being determined through fastidious trials which began in 2005.

Hailing from the impressive 2017 vintage which critics claim to be one of the finest in the last three decades, this wine has its origin in a 19 year old single vineyard block and is limited to a 1,000 bottle blend of 92% Cabernet Sauvignon finished with 8% Petit Verdot, aged for 22 months in 65% new French oak barriques with medium and ‘house’ toast selections.

The Tokara farm was purchased in 1994 by GT Ferreira for residential purposes, but it wasn’t long before the great potential for planting vineyards was recognized and explored. Classic varietals were planted on the 400m above sea-level slopes. The cool air and low temperatures contribute to the excellent quality of Tokara Wines.

Tokara is a picture perfect destination which offers visitors a unique combination of award-winning wines, brandy and olive oils, a gallery of fine art, a restaurant featuring one of South Africa’s leading chefs as well as a delicatessen. The winery, on the R310 outside Stellenbosch, is nestled among vineyards and olive groves on the crest of the Helshoogte Pass with sweeping views across False Bay and all the way to Table Mountain.
