Polished yet powerful, the wine's firm tannin structure provides grip and depth, balanced by vibrant acidity and a long, elegant finish. A true collector’s format with impressive aging potential, it pairs beautifully with roast leg of lamb or lamb steaks with rosemary and creamy potato dauphinoise.
Our Thelema Cabernet Sauvignon is crafted with meticulous care. After gentle de-stemming and whole berry sorting to preserve purity, fermentation takes place in stainless steel tanks using a selected yeast strain to guide flavor development. Gentle pump overs and punch downs extract deep color, structure, and finesse. The wine undergoes malolactic fermentation in barrel and matures for 18 months in French oak—40% new—to bring elegance, depth, and age-worthy complexity.
