Description

Bright and ethereal, this cool-climate Nebbiolo captures the grape’s noble character with a distinctly South African twist. Aromas of savory tomato relish, rose petals, rooibos tea, and dried mushrooms lead into a vibrant palate of sour cherry, raspberry, and tobacco leaf. Its signature tart acidity and fine-grained tannins are softened by a silken mouthfeel, making it both expressive in youth and age-worthy for a decade. Pair with springbok fillet or aged cheeses for a sublime experience.
Fermented at 27°C for 15 days in stainless steel, this Nebbiolo was gently pumped over twice daily to extract deep color and fine tannin. We used a carefully selected yeast strain to enhance the grape’s unique aromatics. After malolactic fermentation in tank, it matured for 24 months in French oak (225L, 400L, and 500L) for added depth and structure. Bottled in August 2023, this wine reflects both precision and passion from vineyard to bottle.
