Description

This elegant and distinctive Méthode Cap Classique is crafted in the classic French tradition using two noble varietals, Chardonnay and Pinot Noir. The blend consists of 40% Pinot Noir, which imparts body, flavor, and maturity to the wine, while the 60% Chardonnay contributes a clean flintiness and refreshing green apple flavors.

The combination of these varietals creates a balanced, refined sparkling wine, reflecting the best qualities of both grapes. The Chardonnay adds brightness and finesse, while the Pinot Noir brings depth and complexity, making this Méthode Cap Classique a perfect choice for special occasions or sophisticated pairings.
The Chardonnay grapes were carefully selected by Niel Bester from a single 20-year-old vineyard at Plaisir de Merle, located 325 meters above sea level on the south-eastern slopes of the Simonsberg. This site offers an ideal climate and soil composition for producing premium-quality Chardonnay, contributing to the wine's vibrant character.

The Pinot Noir grapes were sourced from two distinct 17-year-old trellised vineyards in Stellenbosch. One is situated on the north-eastern slopes of the Helderberg, while the other thrives on the southern slopes of the Stellenbosch Mountains. These unique vineyard sites each bring their own expression of Pinot Noir, enhancing the complexity and balance of the final blend.

Plaisir Wine Estate, not only one of the oldest but one of the largest in the Western Cape at 974 hectares with some 230 hectares under vine. The remaining hectares are largely untouched to preserve the indigenous flora and fauna.

The diverse terroir of the area is characterized by an interplay of climatic conditions, the slopes have well-drained weathered granite soils making it the perfect environment for exceptional grapes to thrive.
