Handpicked from three northwest-facing blocks planted in the '90s, our Cabernet Sauvignon grapes were cold-soaked for 48 hours to enhance color and aroma. Fermented with diverse yeasts for layered complexity, then aged 18 months in 10% new French oak. The result is a wine of elegance, depth, and true Simonsberg character.
