Chardonnay, a progeny of Pinot Noir and Gouais Blanc is responsible for the finest white Burgundy. With the right vineyard site, yields not too high, acid not too low, and winemaking skilled, Chardonnay does produce thrilling, savory, dry, full-bodied wines that will continue to improve in bottle for more than a decade.

Hans Herzog has recently taken a more sustainable approach to their packaging and has removed the capsules from their bottles. As organic producers, they felt a little bit hypocritical using tin capsules, therefore made the decision to have them removed.
