Description

An elegant sweet dessert wine, Fairview La Beryl Rouge 2021 is crafted from Tannat and pours a deep garnet in the glass. The nose is beautifully perfumed with notes of black pepper, wild fynbos, ripe plum, and mulberry compote.

On the palate, natural sweetness is balanced by a structured core of black fruit and black tea, offering depth and refinement. The finish is fresh and lifted, leaving a lasting impression of richness and poise.
The grapes were destalked and transferred to an open-top stainless-steel tank for fermentation to start on the skins. Skin contact was allowed for a few days. During this time, the cap was worked through by hand three times a day to promote extraction of color and flavor.

The juice was pressed off and racked into a full tank to complete fermentation, which lasted approximately six months. The wine was racked off and matured in older French oak barrels for a further 10 months prior to being bottled. Only a light filtration was done on the wine.

Fairview is a working farm, housing a collection of micro-businesses all sharing in a common goal – to craft artisanal and sustainable produce, with a focus on fine wine and cheese. Everything they do is driven by their philosophy of being honest, honoring their heritage and ensuring their ingenuity. Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing rather to “go where the terroir is”. Today, they are one of the few farms that proudly own all their own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch.

Paarl, located 37 miles inland from Cape Town and nestled between two mountains, enjoys a relatively hot climate with moderate to high rainfall. The well-drained granite and shale soils force vines to dig deep for nourishment, which strengthens the vines and naturally limits yields. This results in the production of premium-quality wines with concentrated flavors. Known for producing robust reds and elegant whites, Paarl offers a diverse range of wines that reflect the region’s rich terroir and winemaking tradition.
