The Mitre's Edge The Mitre 2022 is the flagship wine of this boutique Simonsberg-Paarl estate, showcasing the generosity of the region through a Cabernet Franc-led Bordeaux blend of remarkable depth and elegance. Crafted in very limited quantities, it balances power with polish, allowing each variety to contribute its own character while remaining beautifully harmonious. The blend and winemaking details are confirmed by the producer's official label submission.
Dark and inky in the glass, the wine opens with generous aromas of blackberry, cassis, liquorice, green pepper, and subtle earthy spice. The palate is full-bodied and structured, offering concentrated dark berry fruit framed by firm yet refined tannins. Layers of herbal complexity, savoury spice, and earthy richness unfold through a long, lingering finish, while Cabernet Franc brings freshness, aromatic lift, and elegance to the blend. Rich without excess, The Mitre is a beautifully poised expression of Simonsberg-Paarl.
A superb partner for beef fillet, braised short ribs, roast lamb, venison, slow-cooked pork, and mature hard cheeses.
Each parcel was harvested and vinified separately to preserve the individual character of every variety. Fermentation took place in open-top tanks, allowing gentle extraction through careful cap management before the wine underwent malolactic fermentation in tank.
The individual components were matured for 14 to 18 months in 225-litre French oak barrels before the final blend was assembled, resulting in a wine that combines depth, structure, and seamless integration.
