Description
A vibrant sunset pink in the glass, the wine opens with fresh aromas of grapefruit, lemon, and bruised apple, layered with classic notes of brioche and pastry. The palate is medium-bodied and energetic, with lively acidity balanced by a fine, creamy mousse. Flavors of lemon, pomegranate, and subtle ginger biscuit emerge through the palate, leading to an elegant, refreshing finish.
This is a versatile sparkling rosé for both celebrations and the table. Serve well chilled as an aperitif or pair with oysters, smoked salmon, sushi, shellfish, charcuterie, soft cheeses, or lightly spiced dishes.
Secondary fermentation then took place in bottle according to the traditional Cap Classique method. No malolactic fermentation was allowed, helping preserve freshness and acidity. The wine subsequently matured on its lees in bottle for three years, developing its fine mousse along with the brioche and pastry complexity characteristic of extended lees-aged sparkling wine.
