Bright and zesty, this cool-climate Darling Sauvignon Blanc 2025 offers a refreshing burst of tropical fruit, fig, and citrus on the nose, with a juicy palate that balances mid-palate sweetness and a crisp, dry finish. Its vibrant acidity and hints of herbaceous freshness make it a quintessential warm-weather sipper.

Grown on deep red Oakleaf soils in Darling’s coastal vineyards, our Sauvignon Blanc grapes are harvested at dawn for peak freshness. Gently pressed and cold-settled for 48 hours, the juice is then cool-fermented in stainless steel to highlight its tropical thiol profile. After fermentation, the wine rests on fine lees for three months, enhancing texture and complexity before final blending and bottling.

Fairview is a working farm, housing a collection of micro-businesses all sharing in a common goal – to craft artisanal and sustainable produce, with a focus on fine wine and cheese. Everything they do is driven by their philosophy of being honest, honoring their heritage and ensuring their ingenuity. Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing rather to “go where the terroir is”. Today, they are one of the few farms that proudly own all their own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch.

Darling is a small but distinctive South African wine region on the Cape West Coast, where Atlantic breezes and morning fog temper the summer sun. Many vineyards are dry-farmed as traditional bush vines, forcing their roots deep into the region’s weathered granite, clay and sandy soils. The resulting wines often combine concentrated fruit with freshness and a quietly savory edge. Sauvignon Blanc is a regional specialty, ranging from bright and citrus-driven to more textured, mineral styles. Chenin Blanc, Shiraz and Pinotage are equally worth exploring, particularly from older, low-yielding vineyards.
